All you really need to make this easy peanut chili oil is a pair of scissors and a few flavorful ingredients.
How to Make Homemade Chili Oil
2oz. assorted dried chiles, seeded
1 1/2 cups vegetable oil
1/2 cup raw peanuts
1 tbsp. white sesame seeds
1 tbsp. sunflower seeds
2 tsp. coriander seeds
4 garlic cloves cut in half
1 tsp kosher salt
De-seed (if not already done) 2 oz of dried assorted chiles.
Cut the chiles into 1/4 inch pieces with kitchen shears or scissors.
Pour 1 and 1/2 cups vegetable oil into a sauce pan over medium heat with 1/2 cup raw peanuts, 1 tbsp. white sesame seeds, 1 tbsp. sunflower seeds, 2 tsp. coriander seeds and 4 garlic cloves cut in half.
Cook the mixture for 5 minutes until the garlic is golden.
Remove the oil from the heat and cool for 5 minutes and then stir in the chopped chilies.
Cool your freshly made chili oil to room temperature.
Next, blend the oil in a food processor or blender until all of the ingredients are finely ground and then add 1 tsp. kosher salt before pulsing a few more times to mix everything togeather.
Store your extra-flavorful oil in a well sealed jar and serve over your favorite tossed green salad, in asian-inspired soups, over grilled meats, or even as a stand alone dip.
