Chia Seed Horchata for Cinco De Mayo

With the beginning of May comes one of everyone’s favorite holidays, Cinco de Mayo! This year instead of celebrating with margarita after margarita, why don’t you try remembering the celebrations and make a special batch of almond and chia seed horchata for your guests.

All you need is:

  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 5 1/2 c. water
  • cinnamon sticks
  • 2/3 c. chia seeds
  • 1 c. raw almonds

Start by adding the almonds and chia seeds to a medium sized bowl and pour in 2 1/2 cups of warm water.

Stir and add cinnamon stick, then cover the bowl tightly with plastic wrap and refrigerate 8 to 12 hours.

Once the mixture has thickened, remove the cinnamon stick and pour the mixture into a blender, add the vanilla extract and sweeten with honey to taste.

Add 3 cups of water and blend until mixture is completely smooth. Serve chilled or over ice!
