OMG, we’ve never seen a more beautiful summer essential dessert than this double cookie dough ice cream sandwich! Make these easy egg-free cookie dough sandwich layers in no time then freeze with some cookie dough ice cream for an extra cookie-esque punch.
All you need to whip up a batch of your own is:
- 1 stick butter
- 1/3 c. sugar
- 1/3 c. light brown sugar
- 1 tbsp. milk
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 1 1/4 c. flour
- 1 c. mini chocolate chips
- Ice Cream of choice
Start by combining the butter and sugars in a medium sized microwavable bowl and heat until the butter is just starting to melt. Add the milk, vanilla and salt then stir until smooth and evenly incorporate. Next slowly add in your flour and stir until completely incorporated and then stir in your mini chocolate chips.
Resist the urge to eat the entire bowl of egg-free cookie dough right now and line a square baking pan with parchment paper going both ways, then use cooking spray to make sure it doesn’t stick. Add half the dough and press until completely covering the bottom of the pan. Layer another two sheets of parchment paper, cooking spray and press the other half of dough into the pan.
Freeze for one hour then it’s time to add the magic ingredient… ice cream! Remove both cookie sheets from the pan and add a fresh layer of parchment paper, place one cookie square on bottom then scoop on some Chocolate Chip Cookie Dough Ice Cream.
Smooth until even and press the other cookie square on top. Freeze for 8-10 hours then slice with a warmed knife.
