Delicious Chicken Salad Sandwich to Take On a Summer Picnic

Taking food on a summer picnic can be tricky as it gets hotter outside. Chef Chris Santos shares how to avoid eating sweaty sandwiches, as well as his recipe for an easy chicken salad sandwich. Chef Santos’ advice is to pack everything separately and combine the food when you are on your picnic and ready to eat.

To make his go-to chicken salad recipe, you will need:

chicken thighs
Dijon mustard
mayonnaise
Worcestershire sauce
seasoning
lemon
celery
scallions
cucumber
parsley.

To make, shred cooked thighs (or chopped cooked shrimp) into a bowl, then add scallions, celery, lemon juice, parsley, and cucumber.

To make the sauce, in a separate bowl, combine mayonnaise, mustard, Worcestershire sauce, and Old Bay seasoning. Combine sauce into chicken mixture.

Serve on a bread of your choice, and add a side salad and potato chips to round it out!
