Ingredients

5 cups grated zucchini
2 medium cucumbers, peeled and chopped into bite-size pieces
3 medium tomatoes, chopped into bite-size pieces
1 small red onion, thinly sliced
1/4 cup pitted black olives, like Kalamata, finely chopped
1/2 teaspoon dried oregano
1/8 teaspoon freshly ground black pepper
2 1/2 tablespoons of red wine vinegar
2 tablespoons canola oil or safflower oil
2 tablespoons reduced fat feta cheese crumbles

(makes 6 servings)

Process

Grate or use a spiralizer to make 5 cups zucchini “noodles”.

Peel and chop a cucumber, tomato, red onion, and Kalamata olives.

Combine all veggies a bowl. In a separate bowl, whisk vinegar, oil, dried oregano, and black pepper.

Pour dressing onto salad and toss.

Add chopped or crumbled feta to the top and enjoy!
