How to Make a Classic English Coffee Cake

Gorgeous coffee layer cake is so simple, but looks really impressive – with a rich coffee flavor.

Combine 250 grams cubed butter, 200 grams caster sugar, 60 grams golden syrup, and 4 large eggs. Sieve in 250 grams self-raising flour and 1 tsp of baking powder.

Add 3 Tbsp. coffee essence and whisk for 1-2 minutes until smooth. Divide into 2 x 20 cm cake tins and bake at 190° C, gas 5, for 25-30 minutes.

For the filling: combine 200 grams unsalted butter, 400 grams icing sugar, 2 Tbsp. water, and 2-3 Tbsp. coffee essence.

Whisk for 1-2 minutes until smooth. Slice each cake into 2 halves, so you have 4 cake rounds.

Place 1 cake round on a cake stand and ice it, following with the rest of the 3 cake rounds.
