2 cups flour
1/2 cup powdered sugar
1 cup butter cubed
1/2 tsp baking powder
1/4 cup flour
2 cups sugar
1 tsp lemon zest
1/3 cup lemon juice
Using a fork, combine 2 cups of flour, ½ cup of powdered sugar, and 1 cup of cubed butter.
After it is well mixed, press the mixture into a pan and bake at 350° for 20 to 25 minutes.
Next, combine 1/2 tsp. baking powder and 1/4 cup flour into a small bowl. In a larger bowl, mix 4 eggs, 2 cups sugar, 1 tsp. lemon zest, and 1/3 cup lemon juice.
Once combined, mix the flour mixture into the wet ingredients. Pour mixture over hot baked crust.
