How To Make Pumpkin Butterscotch Muffins

Delish just tooth the pumpkin fall fad to a whole new level with their Pumpkin Butterscotch Muffins! That’s right, butterscotch AND pumpkin all in one delish little muffin. We hooked you up with directions and a full list of ingredients so you can get right to cooking after you check out the video above!

Ingredients

1 1/2 c. flour
3/4 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. kosher salt
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1 1/2 c. butterscotch chips, divided
1 c. canned pumpkin
2 eggs
6 tbsp. butter, melted and cooled
1/4 c. sour cream
1 tbsp. vanilla extract

Directions

Step 1
To start crank that oven up to 350 degrees so that when you’re finished making the batter you can get that puppy going!

Step 2
In a large bowl, mix together your sugar, flour, baking powder, baking soda, salt, cinnamon and nutmeg. Next throw in 1 and ¼ cups of butterscotch chips, keep mixing until they are all totally covered with the flour mix so they don’t sink to the bottom of the batter.

Step 3
Next add the eggs, butter, sour cream, and vanilla!

Step 4
Now put liners in your muffin tin and use an ice cream scoop to fill with batter, then sprinkle on your remaining chips!

Step 5
Bake for about 20 minutes and then EAT THEM ALL BEFORE ANYONE ELSE CAN!
