Here’s a really simple, super-delicious salmon poke bowl recipe for you to try. Loaded with healthy fats from the avocado and salmon, plus tons of protein, this dish has enough nutrients to keep you going.
To make:
Chop 12 oz of tuna and set aside in a bowl.
In a separate bowl, combine 1/3 cup soy sauce, 2 Tbsp. rice vinegar, 2 Tbsp. mirin, 1 Tbsp. sesame oil, and ΒΌ tsp sriracha.
Mix well. Put 2 cups cooked sushi rice into a bowl, then add 2 large shredded carrots, 1 medium cucumber, 1 cup shredded green cabbage, 1 chopped avocado, and some of the tuna.
Garnish with sesame seeds, chopped scallions, and drizzle with soy sauce.
