Orzo Salad with Spicy Buttermilk Dressing

Simply adding in wedges of creamy avocado and a fiery buttermilk dressing makes this good for you pasta salad feel like a hearty meal.

Ingredients

1 cup uncooked orzo
1 cup frozen whole-kernel corn, thawed and drained
12 cherry tomatoes, quartered
3 green onions, sliced
1 (15-ounce) can black beans, rinsed and drained
1/4 cup low-fat buttermilk
3 tablespoons chopped fresh cilantro, divided
3 tablespoons fresh lime juice
2 tablespoons light sour cream
2 tablespoons canola mayonnaise
1 teaspoon chili powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground red pepper
2 garlic cloves, crushed
1 peeled avocado, cut into 8 wedges
1 tablespoon chopped fresh parsley

Directions

To make, combine 1 cup orzo, 1 cup corn, 12 halved cherry tomatoes, three green onions, and 15 ounces of black beans in a bowl.

To make the dressing, combine 1/4 cup buttermilk, 3 tablespoons of cilantro, 3 tablespoons of lime juice, 2 tablespoons of sour cream, 2 tablespoons of mayonnaise, 1 teaspoon of chili powder, 1/4 teaspoon red pepper, 2 crushed garlic cloves, 1/2 teaspoon of salt and 1/4 teaspoon of pepper.

Mix well and pour the dressing over the salad. Combine everything together, serve and enjoy!
