Spring Cocktail: Herb Gimlet

This delicious celebration of spring highlights all that’s fresh and now at the farmer’s markets and our favorite part of the dinning room, the bar cart.

Start with the simple syrup by combining equal parts sugar and water in a pan on medium heat, stirring together with a few sprigs of mint, lemon thyme, tarragon, and some lemon zest.

After about five minutes everything will have dissolved and your simple syrup will be ready to give any cocktail a fresh spring flavor.

Transfer it to a bowl to cool and move onto the mixology department.

Fill your glass all the way with ice and add about ¾ oz. of your cooled herb simple syrup, 2 oz. of gin and 1 oz. of fresh lime juice or the juice from one whole lime and 2 dahes of celery bitters to really keep ‘em guessing.

Give it a good shake until icey cold and pour into an elegant glass.

Garnish with a mint leaf and twist of lemon and enjoy a cocktail that will really put a spring in your step!
