How to Make Almond & Date Energy Bites!

With summer fun does a hectic schedule full of throwing on last minute outfits and running out the door. Make sure your stay on track and stick to a healthy diet with easy make-ahead snacks that are packed full of protein for extra energy to dance the day away.

All you need to whip up a batch of these almond and date energy bites is:

1/2 c. raw almonds

8 pitted dates

1/2 mashed banana

1/4 c. almond butter

1 tsp. vanilla

1 tsp. cinnamon

unsweetened shredded coconut

Start by throwing half a cup of raw almonds in a food processor until ground and place in a medium sized bowl, next prices your eight pitted dates until smooth and add to your almonds.

Mash half a banana and add to the almond-date mixture as well.

Next add a quarter cups of almond butter, one teaspoon of vanilla and one teaspoon of cinnamon.

Stir until fully combined and shape into small balls using an mini ice cream scooper.

Roll in unsweetened shredded coconut and place on a tray. Refrigerate for 30 minutes and you’re ready to run!
