Game day nachos are not something to be taken lightly. You can tell a lot about someone by how they make their nachos. Are you a buy something jarred at the store and open over chips or are you the kind of person that takes that extra step to make it the best game day ever!?

We know which one we are, here’s the recipe if you want to prove it:
• 1 pound plum tomatoes
• 4 cloves garlic
• 2-4 chipotle chilies
• 1 tbsp. canned adobo sauce
• 1 tbsp. olive oil
• 1/2 pound chorizo
• 1 c. chopped onion
• 1 tsp. oregano
• 1 c. chicken broth

Start by halving your plum tomatoes, lay them out on a cooking sheet and drizzle with olive oil.

Roast in the oven for 40 minutes at 400 degrees, add 4 cloves of garlic halfway through to get their roast on. When they’re done, pop it all in a food processor or blender along with 2-4 chipotle peppers depending on how much heat you like and 1 tbsp. adobo sauce.

Heat 1 tbsp. oil in a saucepan on medium heat and add you chorizo, cook until crispy, then add your chopped onion and continue cooking until golden. Add your tomato pure and oregano, and cook until the flavors combined. Add the chicken broth and simmer 20-30 minutes until nice and thick. Serve over the freshest nachos you can find.
