The Perfect Spring Canapé: Smoked Salmon in Cucumber Cups

With the warming weather comes lighter coats, brighter colors and refreshing appetizers. Out with the heavy holiday foods and in with light and delicious spring snacks bursting with fresh flavor. That’s why we adore these smoked salmon spread cucumber cups, and don’t tell anyone, but they’re the easiest thing we’ve every made.

All you need to whip up a batch for your next patio party is:

  • 6 oz cream cheese, room temperature
  • 4 oz smoked salmon, finely chopped
  • 1 1/2 tsp chopped capers
  • 1 1/2 tsp minced shallot
  • 2 tsp minced green onion tops
  • 1/4 tsp finely ground lemon zest
  • 1 tsp freshly squeezed lemon juice
  • 6-8 very small cucumbers
  • pinch cayenne
  • pinch salt
  • fresh dill, for garnish

Start by placing your cream cheese in a medium size bowl and allow it to soften at room temperature. Next, finely chop you smoked salmon, give your capers a rough chop, mince your shallot and green onion tops and add everything into the cream cheese.

Season with some fresh lemon zest, and a squeeze of lemon juice to brighten it up for a fresh taste and decide if you want to spice it up with some cayenne or add a little more salt. Fold together and blend until it’s the consistency of a spread.

Peel and chop the cucumbers and use a melon baller to make a cup shape for the salmon spread to go in. Fill with the salmon mixture and garnish with a sprig of dill fresh from the garden.
