Glazed Holiday Pineapple

We have perfected the holiday ham, complete with pineapple slices and maraschino cherries, so we decided to switch things up a bit. Meet the Glazed Holiday Pineapple–it’s a tender, ham – infused pineapple with an apricot glaze.

To make

Mix 1/2 cup salt, 1/2 cup sugar, 1 tablespoon cloves and two bay leaves into 8 cups of water. Heat over high heat for five minutes. Next, remove the peel from your pineapple.

Cut 1/2 inch-deep diamond patterns into the pineapple. Pour the sugar and salt spice mixture over the pineapple in a bowl.

Take four slices of deli him and cut circles out of them with a 3 inch cookie cutter. In the center of your 3 inch rounds of ham, cut out 1/2 inch rounds with a small cookie cutter.

Take your pineapple out of the mixture and dry with paper towels. Wrap the fronds with aluminum foil and set it in a baking dish.

Attach the ham rings to the pineapple with toothpicks. Top with maraschino cherries and attach the cherries with toothpicks.

In a saucepan, combine 1/2 cup apricot jelly, 2 tablespoons water, 1/2 teaspoon pepper, and heat over medium heat for three minutes.

Brush the glaze onto your pineapple and roast at 450° for five minutes. Brush with more glaze and roast at 450° for five more minutes.

Remove the toothpicks and serve!
