Let these easy cookies warm you up!

To make these, peel Granny Smith apples and cut them into bite sized pieces.

On medium low heat, melt 2 tablespoons of butter then add 4 cups of the chopped apples, 1/2 teaspoon of cinnamon, and 1 tablespoon of corn starch.

Cook until everything is well mixed and the apples are softened.

Next add in 1/3 cup of brown sugar and continue to simmer.

Roll out a pie crust and cut cookie-sized circles out using a glass.

Line a baking sheet with parchment paper, then assemble your apple pie cookies.

To assemble, place a dollop of the apple filling in between two circles of pie crust.

Crimp the edges with a fork and cut an X in the top to let steam escape during cooking.

Next, make an egg wash using one egg and brush a little bit on top of each apple pie cookie.

Bake in the oven for 12 minutes.
