Caramel Apple Poke Cake Recipe

Caramel Apple Poke Cake combines all your favorite fall flavors in one caramel-infused spice cake!

INGREDIENTS

2 tbsp. butter, plus more for pan
All-purpose flour, for pan
1 box spice cake mix, plus ingredients needed for batter
5 Granny Smith apples, finely chopped (peeled if desired)
1/4 c. sugar
1/4 c. brown sugar
1 tbsp. cinnamon, plus more for dusting
1 tsp. ground nutmeg
1 tbsp. cornstarch
Juice of 1/2 lemon
1 1/4 c. jarred caramel, plus more for drizzling

FOR THE FROSTING
16 oz. cream cheese, softened
8 tbsp. butter, softened
2 1/4 c. powdered sugar
1 1/2 tsp. vanilla extract

Directions

To make this delicious cake, first butter and flour a pan. Pour the spice cake batter into the pan and bake at 325° for 26 minutes.

Next, make the apple layer by melting the butter over medium heat and stirring in the diced Granny Smith apples. Cook the apples until softened.

Then add the sugar, brown sugar and nutmeg and mix well. Next, add the cornstarch and lemon juice and mix well. Once the cake has cooled, poke holes with the round end of a wooden spoon into the cake.

Pour warm caramel over the top of the cake, allowing it to seep into the holes. Then add the apple topping to the cake and spread the mixture evenly over the top.

Last, spread cream cheese frosting over the top of the cake and drizzle more warm caramel on top.

Sprinkle with cinnamon and enjoy!
