Rose Water, Cardamom Chia Seed Pudding Recipe

This simple and delicious recipe is perfect on a warm summer’s night and couldn’t be easier to make. With it’s creamy texture and light flavor this pudding would be the perfect dish to raise the bar at your next potluck. For this recipe you’ll need:

• 7-8 T. Chia Seeds
• 2 C. Coconut Milk
• 3-4 T. Rosewater
• Raw Honey
• ½ t. Cardamom
• ½ t. Vanilla
• Sultana Raisins
• Crushed Pistachios

Start by pouring the coconut milk in a bowl and stirring in the chia seeds. Add the ground cardamom and vanilla then combine. Next, add in a handful of sultana raisins, which will eventually absorb the milk and become plump and juicy.

Now allow the pudding to set for at least half an hour for a nice creamy texture. Once it’s thickened up you can in your rosewater and garnish with some crushed pistachios and honey.

Just be careful not to get caught licking the bowl like we did ; )
