How to Make Italian Mini Meatball Soup

We’re so glad to finally be moving past only thinking of Italian food as pizza and spaghetti! One of our very favorite dishes is called Zuppa Di Polpette Piccoli or mini meatball soup. Full of classic Italian flavors and healthy ingredients, this rich group is fun and great for dinner parties or a fun new favorite for the kids!

All you’ll need is:

  • 8 oz lean ground veal
  • 1/3 c. grated parmesan cheese
  • 3 tbsp. chopped fresh Italian parsley
  • Pinch each salt & pepper
  • 6 c. chicken stick
  • 1/4 c. Italian parsley leaves
  • 1/2 c. pastina

In a bowl, using hands, combine your ground veal, grated parmesan, chopped parsley, salt and pepper until fully incorporated. Roll heaping teaspoons of the meat mixture into balls and set aside on a large plate. These are your mini-meatballs you’ll add into the soup later.

Meanwhile, in a pot bring stock and parsley leaves to a boil, add pastina and boil gently for 8 minutes. Next, add meatballs to stock and simmer for about 7 minutes or until pastina is tender and meatballs are no longer pink inside. Buon appetito!
