How to Make the Easiest 3-Ingredient Carrot Main Course

Looking for a vegetarian entreé that will satisfy everyone? Look no further. To make this three ingredient roasted carrot dish, you will need the following.

Ingredients

2lbs of rainbow carrots
½ cup olive oil (plus some for drizzling over the carrots pre-roasting)
½ teaspoon salt (plus some for sprinkling over the carrots pre-roasting)
½ teaspoon pepper (plus some for sprinkling over the carrots pre-roasting)
¼ cup pistachios
2 cups basil

Here’s what you do:

Lay the whole carrots on a cookie sheet, drizzle with olive oil, and sprinkle with salt and pepper. Bake at 400° for 25-35 minutes.

Meanwhile, in a food processor, blend ¼ cup of pistachios, 2 cups of basil leaves, ½ cup of olive oil, ½ teaspoon salt, and ½ teaspoon of pepper until you have a paste.

Spread the pesto paste over the roasted carrots, then garnish with pistachios and pieces of fresh basil leaves.
