How to Make Mashed Potatoes in the Oven

Tired of boiling your potatoes? Here’s a low–maintenance way to make delicious creamy potatoes without having to watch your pot. Simply pierce your potato skins and throw them in the oven while you prep your other holiday dishes. Then you can mash and mix them later.

To make:

Place 2 pounds of Yukon Gold potatoes and 2 pounds of russet potatoes on a foil–lined baking sheet.

Poke holes in all of the potatoes with a fork. Next, take one head of garlic and slice in half, then drizzle with olive oil, salt, and pepper. Wrap the garlic in tin foil and place on the baking sheet with the potatoes.

Bake everything at 425° for 65 to 75 minutes. When the potatoes are cool enough to handle, slice them in half and scrape out the potato flesh into a bowl.

Squeeze the garlic cloves out of their hulls and mash it into the potatoes. In a measuring cup, warm 2 cups of half-and-half, then add 6 tablespoons of unsalted, melted butter.

Pour the mixture over the potatoes and mix well. Next, stir in salt and pepper.

Top the potatoes with 2 tablespoons of chopped chives. Enjoy!
