Start by cracking two eggs into a bowl and remove any pieces of shell that might have fallen in then add a little bit of butter, about half a tablespoon, to your eggs because you want it to melt while it’s cooking and release all that moisture into the eggs.

Cook over medium, medium-low heat and begin to scramble gently with a spatula. If your eggs begin to set too quickly move pan from the heat. Stir just enough to keep eggs from setting too hard in any one place. Once they begin to form curds and are almost cooked but not quite together, add any salt or cheese if you’d like.

Remove eggs when they’re still a little glossy since they’ll continue to cook out of the pan. Scoop onto your plate and enjoy the softest, most luxurious custardy scrambled eggs you’ve ever had, let alone made!
