Model Valentina Zelyaeva’s Favorite Sunchoke Soup Recipe

She starts today’s soup with a trip to the farmer’s market for some fresh, local ingredients. So swing by your local produce department and pick up this list of goodies.

Your Shopping List
•Sunchokes
•Celery
•Celery Root
•Kale
•Garlic
•Shallots
•Ginger

Your How-To
Start by washing the sunchokes really well and give them a rough chop. Next peel the celery root, wash well and chop. Then peel your shallot and chop. Add to a big pot with herbs of choice, Valentina went with thyme and bay leaf. Add 2 cups of water, or enough to cover the vegetables to the pot and a good pinch of salt.

Cover the vegetables and allow to cook on medium heat. While the vegetables stew, prepare your other ingredients for the soup. Chop you celery and garlic, then grate the ginger and squeeze out it’s juice. Place the chopped celery garlic and ginger in a blender, remove the bay leaf and thyme from the cooked vegetables and add them to the blender as well.

Once your soup is thoroughly blended to a velvety texture, serve with a garnish of pumpkin seeds, olive oil and fresh ground pepper. You’re looking like a Russian supermodel already 😉
