Oh the joys of parenting! Packing a lunch that your kids will actually eat is a lot harder than it looks. For three fool proof lunches that can be put together in a matter of minutes, grab some sliced ham and turkey and get to it with these three easy options.
TURKEY HUMMUS PINWHEELS
As pretty as they are to eat, pinwheels are a fun, healthy option. Spread fiber-rich humus over a whole wheat flour tortilla then add a few slices of roast turkey and provolone cheese. Then layer with baby spinach and roasted red bell pepper for color and flavor. Roll of the tortilla and slice into cute, bite-sized pinwheels!
BLACK FOREST HAM WRAP
If you’re looking for a quick gluten-free option, make a wrap using black forest ham. Just spread a little mustard on your slices of ham, top with chopped romaine lettuce, thinly sliced bell peppers and some chopped pickles. Roll up the ham wrap and secure with a toothpick.
LUNCH BOX KABOBS
You can use coffee stirrers or wooden shish-kabob sticks with the pointy end cut off for a fun lunchbox kabob that can be tailored to your little one’s tastes. Skewer cucumber, mini mozzarella balls, a pickle, sliced turkey and cherry tomatoes.
