As the weather gets colder, and we trade our cold brews for a hot, peppermint latte, we are also packing in the warm foods to warm and fatten our bellies. Okay, maybe not fatten. When you think about getting out of the winter chill and back home, you might also be imagining slurping down a delicious winter soup. There are so many amazing soups to try, and ones that are even better to make! So here are some amazing soups you can make this winter:
1. Thai Peanut Sweet Potato Soup
Combine yellow onions, carrots, sweet potatoes, peanut satay, and veggie broth in a large pot. Blend, and top with sautéed pecans, a coconut cream, and lemon zest.
2. White Bean, Fennel, And Italian Sausage soup
Cook sausage and leave drippings in the pan, the combine onions, celery, fennel, and garlic in a large pot. Cook for five minutes and then add white wine, white bean, diced tomatoes, and chicken stock. Bring to a boil. Add parmesan toast and enjoy!
3. Slow Cooker chicken Soup
Cook bacon in a pan, top your chicken with garlic seasoning, and cook chicken in the same pan as the bacon drippings. add onions, celery, carrots and broth into slow cooker. Cook on low for two hours, and add baby potatoes.
