How to Make Peanut Butter Chicken Noodles

Yum, yum, yum! We’re loving this peanut butter chicken noodle recipe, perfect for a mid-week meal or dinner-date at home. “It’s absolutely wicked!” in the words of that adorable Brit. (What did you think all those yums were for?) 😉 Oh, and it’s as good for you as it is delicious.

All you’ll need to whip up this easy meal at home is:
•coconut oil
•red onions, chopped
•chicken breast pieces
•yellow bell pepper
•zucchini, slices
•peanut butter
•soy sauce
•glass noodles

Start by heating some coconut oil in a pan or wok then add your chopped red onions and pieces of chicken breast.

Sauté for two or three minutes until the chicken is cooked almost all the way through then add in your other favorite vegetables like yellow bell peppers, zucchini slices and baby corn. In a small bowl, combine peanut butter, boiling water and soy sauce until it’s stirred well with no lumps.

Add to your chicken and vegetables in the pan and make sure it evenly coats all of your ingredients before adding in the noodles. Cook for a few minutes longer and enjoy!
