Well, there is no need to be even be a little afraid, because cooking with one is more intuitive than you’d think. While it may seem daunting dealing with a foreign vegetable, this on is a cinch to work with.

And with a texture reminiscent of pasta, this vegetable is the perfect vehicle for a light olive oil and cheese dressing or any traditional pasta sauce.

You can even bake the squash in little ramekins to create a gratin-like dish!
