There are few things in life that make me as happy as cookies. Add in a simple recipe that takes only a few minutes to create, I might just be the happiest person in the world. There are some amazing cookie-wich recipes that you just have to try and each one is only about four ingredients each! The cookie sandwiches are filled with different types of frosting, but of course you can always fill with ice cream as well!

1. Birthday Cake Cookie Sandwich
Mix one package of white cake mix, 1 cup of sprinkles, 2 eggs, 3/4 cup of oil. Bake at 350 degrees for 15 minutes. Add vanilla frosting or vanilla ice cream in the middle.

2. Red Velvet Cookie Sandwich
Mix one package of red velvet cake mix, 1 cup of white chocolate chips, 2 eggs, and 3/4 cup of oil. Bake at 350 degrees for 15 minutes. Add cream cheese frosting in the middle.

3. Chocolate Peanut Butter Cookie Sandwich
Mix one package of chocolate cake mix, 1 cup of chopped peanuts, 2 eggs, 3/4 cup of oil. Bake at 350 degrees for 15 minutes. Add peanut butter frosting or ice cream in the middle.

4. Carrot Cake Cookie Sandwich
Mix one package of carrot cake mix, 1 cup of chopped walnuts, 2 eggs, 3/4 cup of oil. Bake at 350 degrees for 15 minutes. Add cream cheese frosting in the middle.
