How to Make Super Simple Fresh Pasta

We’ve all had dry pasta in every shape and size, but fresh pasta is on another level. Fire up that pasta cutter and get fancy for a night. You deserve it.
Ingredients
1 cup all-purpose flour
3/4 cup 00 flour (specifically Italian milled flour used for pasta making)
1/4 cup semolina flour
2 large egg yolks
2 large whole eggs
2 Tbsp. water
1 Tbsp. olive oil
Procedure
Step 1
Mix the all-purpose flour, 00 flour, and semolina flour in a medium size bowl with a whisk.
Step 2
Empty the flour mixture onto a marble surface, creating a little mound of flour with a nook in the middle.
Step 3
In the center of flour nook place the egg yolks, whole eggs, water, and olive oil. Prick the yolks with a fork and proceed to mix the liquid ingredients in the flour nook.
Step 4
Slowly add in the flour to the center of the liquid mixture until the dough begins to come together.
Step 5
Knead the dough until smooth, the dough should spring back when you touch it with your finger. Then wrap the dough in cling wrap and let rest for 1-2 hours.
Step 6
Quarter you’re pasta dough into 4 even pieces, slightly flatten each piece, and put through your pasta roller until each pieces is thin (about 1/16″ in thickness). Remember to flour your roller and surface periodically to prevent sticking.
Step 7
Cut the now thinned dough in half and pass through the cutter attachment of your pasta maker.
Step 8
Bundle each fresh noodle portion into nests and dust lightly with flour.
