Vegetarian Sweet Potato Nachos

We love our vegetarian friends, bless them for having a conscience, but sometimes it’s darn hard to find a tasty meal to serve and please everyone’s palate.

Well, here’s a dish that’s casual, guilt-free and safe for anybody to eat. Start by slicing sweet potatoes. Use a mandolin if you have one or just slice in thin, even rounds.

Add coconut oil, paprika, two cloves of crushed garlic, salt and pepper and combine. Spread out on cooking sheets and bake until becoming crispy and turn halfway through.

Now comes the nacho part, sprinkle on cheese and spoon over black beans and return to the oven until the cheese melts.

Top with chopped tomatoes, shallots and guacamole, dollop on your yogurt and don’t forget the cilantro for a serious (vegetarian friendly) nacho experience!
