Even If You Hate to Cook, You Can Cook These Meals

Personally, I love to cook. I find it therapeutic and really satisfying to make my own food. But even I have those nights where I just don’t want to put in the time, and a delivered pizza sounds a lot more appealing than a laborious meal. Whether you usually like to cook, or maybe think you’re a terrible cook and don’t want to risk burning the house down, it’s always good to have a few simple, fool-proof recipes on hand for those lazy nights.

Chicken Sausage Skillet

This is as simple as it gets. Throw everything in a pan, add your veg of choice and enjoy. it’s easy, healthy and delicious.

1 pound bulk chicken sausage
1 can cannelini beans
1 cup fresh spinach, coarsely chopped
1 cup mushrooms, diced
1/2 cup onion, diced
2+ cloves of garlic, diced

Crumble and brown chicken sausage in pan, along with onions and garlic. Add spinach and mushrooms and cook until al dente. Add beans and spices to taste. Simmer for 10 minutes before serving.

Vegan Burrito in a Flash

Perfect for breakfast, lunch or dinner, this easy burrito is full of protein and fiber.

Half a link of soy chorizo
1 egg
1 flour tortilla
1 cup of mashed avocado
olive oil
hot sauce for taste

Crumble the chorizo in a skillet with a touch of olive oil and then add the egg and scramble. Warm up the tortilla and add the avocado, chorizo, egg and hot sauce.

Cauliflower Dirty Rice

A new use for one of our favorite Trader Joe’s products!

2 bags cauliflower rice (in frozen section)
1 lb. ground meat of choice
1/4 cup of salsa
1/2 tsp. garlic powder
salt and pepper

Cook cauliflower rice in skillet according to directions. Remove from pan or use a separate pan to brown the ground meat. Combine meat and rice, stir in salsa, garlic powder, salt and pepper.
