Eat Clean: Strawberry Chia Pudding

There is nothing nicer than whipping up a batch of fresh puddings. This sweet treat is also nice on your waistline and packed full of healthy ingredients.

To whip up a batch of your own strawberry chia puddings, all you’ll need is:

4 c. almond milk
2 c. fresh strawberries
2 tbsp. coconut oil
1 tsp. cinnamon
3 tbsp. honey
1 tsp. vanilla
pinch of salt
1/2 c. chia seeds

Start by adding the almond milk, strawberries, coconut oil, cinnamon, honey, vanilla and a pinch of salt to your blender or food processor.

Blend until it’s the consistency of a thick milk shake, then stir in your chia seeds. They’ll start to absorb the liquid and add a wonderful consistency to your pudding.

Next, pour into four glasses or bowls for serving and put in the fridge and allow them to harden up, then top with some freshly sliced strawberries.
